Chocolate Chip Walnut Date Bread

Ingredients:

  • 2 Eggs

  • 20 Pitted Dates

  • ½ cup warm milk (any milk you prefer)

  • 3 tbsp Brown Sugar (I use either Light or Dark)

  • 1 ½ cups AP Flour

  • 2 tbsp Whit Marie’s Bourbon Extract or regular Bourbon (optional)

  • 1 tsp Whit Marie’s Vanilla Extract

  • 1 tsp Baking Powder

  • 1 tsp Baking Soda

  • ½ tsp Salt

  • 1  cup Chocolate Chips (I use a mix of Semi-Sweet and Milk)

  • ¾ cups chopped Walnuts

  • Prepared greased loaf tin


Directions:

  1. Preheat oven to 350 F

  2. Warm Milk and add dates, let set for 10-15 mins

  3. Blend the milk and dates until smooth

  4. Add Flour, Eggs, Brown Sugar, Salt, Baking Powder, Baking Soda and Vanilla Extracts and whisk until smooth.

  5. Add Chocolate Chips and Walnuts and stir until fully incorporated.

  6. Pour into greased Loaf Tin

  7. Bake for 25-30 mins, then cover with aluminum foil and bake for another 10-15 mins or until a toothpick comes out batter free

  8. Let cool completely and serve


Notes:

  • I like to serve with vanilla ice cream or whipped cream, and hot tea or coffee

  • The Bourbon Vanilla is optional, but please make sure to add vanilla extract in the mix.
