Sweet Potato Soufflé

Soufflé Ingredients:
4-6 cups baked sweet potato (I roast them on the oven until soft)
1 cup white sugar
½ cup melted salted butter
¼ cup heavy whipping cream
2 eggs
1 tbs Whit Marie’s bourbon vanilla extract (or original vanilla extract)
Topping Ingredients:
½ cup melted salted butter
½ cup AP flour
1 cup Brown Sugar
1 cup chopped pecans
1 cup mini marshmallows
Mix the sweet potatoes in either a stand mixer or with a hand mixer. You want them to be smooth before adding other ingredients.
Mix in the remaining ingredients until smooth.
Pour into a greased 9x13 pan (glass, aluminum, metal).
Bake at 375 degrees for 25-30 mins
Take out and add topping and bake for another 10-15 mins
Let cool and Enjoy!
